Exotic Tropical Citrusy Salad


OMG!!! This Salad is just amazing. Right now Mumbai is very sultry and humid and I was craving for something citrusy. This is an unusual variant of fruits that combine sweet and sour taste. Little twist with roasted cashew.


Most amazing thing about this salad is "The Dressing"!!! It's absolutely divine. This is the best dressing I have ever tasted with perfect amount of sweet and sour combination. You can drink
it just like that. I have not added honey in my dressing so it was little bit more tarter but I will suggest you to add lil bit honey in your dressing.

         Ingredients

  • 2 oranges, peeled and segmented
  • 2 Tangerine, peel and pith removed, cut into slices
  • 2 Kiwis, cut into slices
  • 1 cup sliced Pineapple
  • 1/2 cup Pomegranate seeds
  • 1 Tablespoon roasted Cashew
  • Handful of Mint Leaves
Dressing
  • 1 cup of Pomegranate Juice
  • 1 Teaspoon of red wine Vinegar
  • 1/2 Teaspoon of Honey
  • Freshly ground Pepper
  • 1/4 Teaspoon of Sea Salt
Directions:-
  • To make the dressing, simmer the pomegranate juice over medium heat until it thickens to 1/4 cup. remove from heat and let it cool. Whisk together the juice. red wine vinegar, honey, salt and freshly ground pepper. 
  • Arrange fruits on a platter. Top with mint leaves and cashew.
  • Drizzle the dressing over salad. 
  • Enjoy!
