Pineapple UpSide Down Cake


This cake looks gorgeous, easy to bake and tastes delicious. Before trying this recipe, I did not know that this cake would be so easy to make. If you have not made any dessert for your party and you are in hurry, this cake would be the crowds' pleasure. This
classic cake makes a beautiful center piece for party.



Everybody in my family has sweet tooth, yet I like savoury items. But with this cake my taste buds have changed. I was literally drooling when this cake came out from oven. It is deliciously moist with a fantastic flavor. You can serve the cake with a dollop of ice-cream. I have book marked this recipe ages ago in BBC Good food. I think this cake would be ideal for beginners as it was so easy to make.

Ingredients

For the toppings
  • 50 Grams Softened Butter
  • 50 Grams Light Brown Sugar
  • 7 Pineapple rings in Syrup ( Drained and reserve 2 tbsp the syrup)
  • Glace Cherry
For the Cake
  • 100 Grams Softened Butter
  • 100 Grams Castor Sugar
  • 100 Grams Self raising Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Vanilla
  • 2 Eggs 
Directions:-
  • Heat oven to 180 degree C.

  • For the topping beat butter and sugar until creamy.
  • Spread over the base of 20-21 cm round cake tin.

  • Arrange pineapple rings on top then place cherries on the center of the rings.
  • Place the cake ingredients in a bowl along with 2 tbsp of the pineapple syrup.

  • Using an electric whisk, beat to a soft consistency.

  • Spoon  into the tin on top of the pineapple and smooth it out.
  • Bake for 35 minutes. Leave to stand for 5 mins.
  • Turn out onto a plate.
  • Serve warm with custard or ice-cream.
