Ingredients
- 1 Tablespoon of Butter
- 1 Medium Onion finely chopped
- 1 Teaspoon of chopped Garlic
- 1 Medium chopped Potato
- 2 Cups Vegetable Broth
- 450 Grams washed and Chopped Spinach
- 2 to 3 Cups Milk
- Lemon Zest of half a lemon
- Pinch of freshly grated Nutmeg
- Cream (Optional)
- Salt and pepper to taste
Directions:-
- Melt the butter in a saucepan. Add onion and garlic. Saute until softening.
- Stir in potato and saute for few minutes.
- Pour in the stock and simmer for 10 minutes,until potato starts to cook.
- Pour in the milk and simmer for 5 minutes.
- Add lemon zest and spinach. Cook till spinach has completely wilted down. (about 10 to 15 min)
- Cool the mixture and blend it until silky smooth.
- Return to the pan and reheat and add salt, pepper and nutmeg.
