Spinach Soup

A delicious and nutritious Spinach soup that's perfect any time of the  year but best in winters. This recipe is flavorsome and intriguing bright green soup and goes
perfect with warm crusty bread. 

  • 1 Tablespoon of Butter
  • 1 Medium Onion finely chopped
  • 1 Teaspoon of chopped Garlic
  • 1 Medium chopped Potato
  • 2 Cups Vegetable Broth
  • 450 Grams washed and Chopped Spinach
  • 2 to 3 Cups Milk
  • Lemon Zest of half a lemon
  • Pinch of freshly grated Nutmeg
  • Cream (Optional)
  • Salt and pepper to taste

  • Melt the butter in a saucepan. Add onion and garlic. Saute until softening.

  • Stir in potato and saute for few minutes.

  • Pour in the stock and simmer for 10 minutes,until potato starts to cook.
  • Pour in the milk and simmer for 5 minutes. 
  • Add lemon zest and spinach. Cook till spinach has completely wilted down. (about 10 to 15 min)

  • Cool the mixture and blend it until silky smooth.
  • Return to the pan and reheat and add salt, pepper and nutmeg.
