Karahi Mushroom







Sorry for not posting anything from past 18 months..I had some personal reason for not writing anything but I am really grateful for your support and encouragement to start my blog again... :) 


Mushroom is one of our family's favorite vegetable. A new study shows eating mushroom will help you to lose weight. Mushrooms are low calorie food and are an excellent source of B vitamins, minerals, potassium and carbohydrate with absence of fat and sodium.. Including mushroom in your daily diet could be useful in regulating blood sugar..Mushrooms are standard fare in Asian culture but not very common in everyday Indian cooking.
I usually stick to cooked mushrooms. They are higher in nutrients than raw mushrooms and I don't like the taste of raw mushrooms. 



If you are still skeptical about eating mushroom then try this recipe. It has semi-dry gravy with the prominent flavor of tomatoes and more on the spicier side because of the red chilies.Kadai mushroom has spicy gravy but if you want to adjust spice according to your taste you can do it.. and if you don't like mushroom you can substitute with paneer but I recommend  you to try  mushroom at-least once.. :)

Ingredients
Dry roast Masala
  • 1 Tablespoon Coriander Seeds
  • 3 to 4 Dry Red Chilies
For Gravy
  • 400 Grams Mushrooms cut into halves
  • 2 Tablespoon Ghee/Oil
  • 2 Teaspoon Grated Ginger
  • 1 Teaspoon Chopped Garlic
  • 2 big grated Onion
  • 5 Big finely Chopped Tomato
  • 1 Teaspoon Chili powder
  • 1 Teaspoon Coriander-cumin seed powder
  • 1 Teaspoon Garam masala
  • 1 Teaspoon Kasuri Methi ( dried fenugreek leaves)
  • 2 Tablespoon Fresh Cream
  • Salt to taste
Directions

  • Combine the coriander seed and red chilies. Dry roast on a hot tava for a minute,while stirring continuously. Remove and keep it cool. Blend in a mixer to a fine powder.
  • Heat ghee/oil in a karahi, add the garlic and saute for few seconds.

  • Add prepared coriander chili powder and saute till fragrant.

  • Add grated ginger and saute.
  • Add grated onion and saute on a medium flame till they turn translucent.

  • Add chopped tomatoes and cook till the ghee separates,while stirring continuously.
  • Add chili powder, coriander-cumin seed powder, garam masala and kasuri methi, mix well and cook till oil separates.

  • Add mushrooms and cook till done.
  • Add cream and mix well.

  • Serve with hot Naan or Paratha.
