Candied Rose Petals Chocolate Cookies


These are simple chocolate cookies with a twist. This twist is coming by adding candied rose petals (better known as Gulkand in India). I found this recipe in "Good Food India". It has been  adapted from Chef Vikas Khanna. I have tried some of his other recipes and what I like most is his cooking of Indian trademark dishes with contemporary twist.




The all time American favorite classic cookie is Chocolate chip cookie. Chef Vikas Khanna has given this an interesting twist by adding Gulakand. The floral aroma of candied rose petals and
dark chocolate are divine. 

Makes 2 dozen
Ingredients
  • 1 Cup Unsalted Butter
  • 1 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1 Large Egg
  • 1 Egg Yolk
  • 2 Tablespoon Heavy Cream
  • 1/2 Cup Gulkand/ Rose Spread 
  • 2 1/4 Cup All purpose Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  •  1 to 2 Cups Dark Chocolate Chip
Directions:-
  • Preheat oven to 175 degree C. Line a cookie sheet with parchment paper.

  • In a large microwave safe bowl, melt butter,sugar and brown sugar for 30 seconds. let it cool a bit.

  • Blend in the egg and egg yolk. Add the heavy cream and rose spread ( gulkand ). Stir until just combined. Do not overmix.

  • In a medium bowl, sift together the flour,baking soda and salt and carefully fold into the wet mixture. Gently add the chocolate, mixing it well. Freeze the dough just until cold and firm. ( about 5 to 10 minutes )

  • Using an ice cream scoop, drop the dough 3 inches apart onto prepared cookie sheet. Bake for 12 to 15 minutes or until the edges of the cookie begin to brown.
  • Transfer the cookies to a rack to cool.
