Pasta in Mushroom Sauce with Sun Dried Tomatoes


A creamy Mushroom Pasta that can make satisfying one bowl meal. I made White Sauce from scratch and its flavored with fresh button mushroom, garlic and shallots. It's very quick and easy dish and my daughters love it. This sauce is an extremely versatile sauce and can be served with number of dishes. 

One can make this sauce with any type of mushroom
including button, dried Porcini or all mixed. Never wash the mushroom as flavor will be lost in that process. You can add white wine to this sauce, but I did not use it. Saute Mushroom in butter for the best flavor. I used whole grain pasta which offers fibers, vitamin and minerals. 



 This sauce is so creamy, delicious and lip-smacking. Due to the sauce you won't even notice that you used whole grain pasta. I was so happy with the fact that my girls went for seconds serving. Which is why I want to make this dish again and again. 


Ingredients

  • 2 to 3 Cups Whole Grain Pasta ( I used Penne )
  • 4 Cups of White Sauce
  • 1/2 Cup Finley Chopped Shallots
  • 1 Tablespoon of Chopped Garlic
  • 300 gm sliced Button Mushroom
  • 2 Tablespoon of Butter
  • 1 Teaspoon Oregano
  • 1/2 Teaspoon Red Chili Flakes 
  • 1/4 Cup White Wine ( optional )
  • 1/2  Cup Grated Parmesan Cheese
  • Handful of Sun Dried Tomatoes
Directions:-

  • Boil big pot of water for pasta, and when it boils, salt it well and cook the pasta until al dente. Drain the pasta and set aside.

  • Heat a pan with butter. Add garlic and saute for few seconds. ( don't let it brown )

  • Add shallots and saute till soft. Add sliced button mushroom. Saute till golden brown.
  • Add oregano and chili flacks. Saute till fragrant.

  • Add White Sauce and seasoned with salt. Add Parmesan and stir well. Add Sun dried Tomatoes.

  • Add pasta and toss it. 
  • Serve with warm garlic bread.
