Gingered Nuts




"Diwali" the festival of lights, firecrackers, gifts and loads of delightful Diwali Food. Any celebration is simply incomplete without the presence of good and mouthwatering food. The Diwali food list usually includes sweets ( Mithai ) and savoury items. Nuts ( dry fruits ) are essential part of this festival. Dry fruits are one of the most popular and widely appreciated gift on this occasion. Nuts can be stored for months if kept in airtightcontainers. Buying salted and masala nuts are very common and I wanted to try something innovative this Diwali. I stumbled upon this recipe while surfing net in Martha Stewart's site. These days one also has the option 
to gift  ready-made gift hampers to pamper special people in their lives, but I thought what can be better gift than homemade baked nuts. This Diwali I am gifting all my friends and family homemade "Gingered Nuts". I am sure after making this item your guest will wonder from where have you bought this! Try yourself to believe me. :)

Ingredients

  • 3 Cups unsalted Mixed Nuts
  • 3/4 Cup Chopped Candied Ginger
  • 1/4 Teaspoon Red Chili Powder
  • 2 Teaspoon Salt
  • 1/4 Teaspoon Ground Pepper
  • 2 Tablespoon Sesame seeds
  • 1/4 cup Sugar
  • 1/4 Cup Water
Direction:-
  • Preheat oven to 180 degree C.

  • In a large bowl combine nuts, candied ginger, red chili powder, salt, ground pepper and sesame seeds.

  • In a small saucepan, combine sugar and water over medium high heat. Bring to boil and cook. Stirring occasionally until sugar dissolves.

  • Pour sugar syrup over nut mixture and toss well to combine.

  • Arrange in a single layer on a parchment lined rimmed baking sheet.
  • Bake until nuts are golden. about 15 to 20 minutes. Stirring occasionally.
  • Let cool completely before braking into bite size pieces.

Notes:-
  • I have used cashew, almonds, pistachios and walnuts.
  • Do not have candied ginger. No worries :). Put 1 tablespoon of fresh grated ginger while making sugar syrup.
