Red Bean Quesadillas with Ranch Dip and Fresh Tomato Salsa




Mexican food is one of our favorite cuisines apart from Italian and Chinese. :) My in laws loves  Mexican cuisine. Mexican food in known for its varied flavors, colorful decoration, colorful ingredients and variety of spices. I think it is very similar to Indian food. "Red Bean Quesadillas" has lots of flavors and colors.  The  ingredients required for this dish  are mostly available in our pantry, you do not need to go out and buy it from stores. :) I can't get enough of this dish, so when I am in the mood for fewer calories I omit Cheese from it. ;)

Samagri (Ingredient)

For Refried Bean 
  • 1 Cup of Dried Kidney beans (Rajmah)
  • 1 tsp Garlic
  • 1 Medium Onion Finely Chopped
  • 1/2 tsp Cumin seeds
  • 1 tsp Red Chili Powder
  • 1/2 package Taco seasoning
  • 8 Tortillas Home made Tortillas
  • Salt to taste
For Fresh Tomato Salsa
  • 2 Cups Coarsely Chopped Tomatoes
  • 3/4 Cup Chopped Onion
  • 1 Garlic Clove Chopped or 1/4 tsp Garlic Powder
  • 1/3 Cup Chopped Coriander
  • 3 to 4 Chillies 
  • 1/4 tsp Cumin
  • 1/2 Lime Juice
  • 1 tsp Soya Sauce
  • A Pinch of Sugar



For Bean Mixture:-


Vidhi (Direction)
  • Soak the kidney bean over night, next day drain and pressure with water.
  • Drain the bean and mash it coarsely.

  • Heat a pan with oil add garlic and saute till fragrant, add onion saute till golden brown.

  • Add cumin powder, chili powder, taco seasoning, mashed bean and salt. Saute little bit more.
  • Switch off the stove and cool it.
For Salsa:-

  • Combine all ingredients and gently stir well.
  • Refrigerate about an hour to give flavors time to mix.
How to put Quesadilla:-



  • Take a tortilla and spread 3 to 4 tbsp of bean mixture on half of the tortilla. Add  fresh tomato salsa and cheese.
  • Fold it exactly into half to cover the spread completely. 

  • Heat a pan with olive oil and toast stuffed tortilla in a medium heat on both side. Cut into two quarters.
  • Serve with fresh tomato salsa and sour cream or ranch dip.


Notes:-

  1. You can use bought out canned refried beans.
  2. Do not use canned/bottled salsa as your quesadilla filling as it gets soggy. However for side serving the canned/bottled salsa can be used.
  3. I make tortillas in bulk and freeze it. 
  4. Use cheese as much as you want.
