Mexican food in known for its varied flavors, colorful decoration, colorful ingredients and variety of spices. I think it is very similar to Indian food. "Red Bean Quesadillas" has lots of flavors and colors.  The  ingredients required for this dish  are mostly available in our pantry, you do not need to go out and buy it from stores. :) I can't get enough of this dish, so when I am in the mood for fewer calories I omit Cheese from it. ;)

  1. You can use bought out canned refried beans.
  2. Do not use canned/bottled salsa as your quesadilla filling as it gets soggy. However for side serving the canned/bottled salsa can be used.
  3. I make tortillas in bulk and freeze it.
  4. Use cheese as much as you want.
