Mixed Vegetable Paratha




At Last I have got that recipe which my kids will eat without any fuss. In fact I expect them to demand this from me very frequently. I feel that feeding vegetables to kids is most difficult part of parenting. Whatever vegetable  my elder daughter ( Dia ) likes is what my younger daughter ( Aaesha ) won't touch.
You can mix any kind of vegetable ( specially that vegetable which your kids won't eat and you want them to )  and your kids won't know it. Dia does not like beans, green peas, tomatoes etc. And Aaesha does not like"Aloo"(Potatoes) Yeah, I know its hard to believe. :) This vegetable Paratha is a "Life Savior" for me !!

Ingredients

  • 2  Boiled Potatoes
  • 1/2 Cup  Boiled Beans
  • 1/2 Cup Boiled Carrot 
  • 1/2 Cup Boiled Green Peas
  • 1 Small Onion Finely Chopped
  • 1 Small Tomato Finely Chopped
  • 1 Teaspoon Ginger garlic Paste
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Pav Bhaji Masala
  • 1/2 Teaspoon Kitchen King Masala or Garam masala
  • 1/2 Teaspoon red chili powder ( optional )
  • 2 Teaspoon Oil+ For roasting
  • Salt to taste
For Dough
  • 1 Cup of Wheat Flour
  • 1 Tablespoon Oil
  • salt to taste
  • water as needed
Directions:-
  • Make a soft dough, as we do for roti. Keep covered.

  • Mash potatoes, green peas, carrot and beans with potato masher.
  • Heat oil in a pan and temper with cumin seeds. Add Ginger garlic paste and finely chopped Onion and saute till soft.

  • Add Tomatoes and saute for a minute.

  • Add mashed potatoes, green peas, carrot and beans. Add pav bhaji masala, kitchen king masala, red chili powder and salt. Mix well until everything blends and fry for 3 to 4 minutes.
  • Cool down the mixture and make 8 equal size of balls. 

  • Make 8 equal size of balls from dough as well.
  • Roll a ball of dough and keep the stuffing in the center. Cover the stuffing and make a ball.
  • Roll it out with generous dusting of flour to make thick parathas.
  • Heat skillet and drizzle oil. Toast both side in medium flame till golden brown.
  • Serve with curd or raita..
