Banana Bread



First time I had "Banana Bread" at  The Imperial Hotel Janpath. After that whenever I have tea in the afternoon I crave for it. I tried at least 18 recipes of banana bread but this was the best. I just hate bananas but I like the banana in the Banana Bread. This is an indirect way of getting the benefit of the fruit. (Bananas are good for our health :) ) In our house the consumption of Banana as a fruit is low and therefore most of the times we waste half of whatever is bought.
Having shared the benefit
of the fruit, would like to go the flip side of it.
This recipe contains high amounts of butter and sugar (not good for health freaks). I m sure one can break the rules once in a while. You will not regret it at all.
I have added chocolate chip to this cake, but if you want you can add some nuts too.

Ingredients

  • 2 Cups Flour
  • 1 1/2 Cups Sugar
  • 3/4 Cup Unsalted Butter
  • 3 Very Ripe Bananas
  • 1 Teaspoon Vanilla
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/2 Cup Butter Milk
  • 2 Eggs or 1/2 Cup Egg substitute or 1/2 cup Yogurt
  • 1/2 Cup Chocolate chip
Directions:-
  • Preheat oven at 180°.

  • Cream Butter and sugar by blender.
  • Sieve flour, salt and baking soda together. Keep aside.

  • Mash Banana. Add to creamed mixture. Add eggs or egg substitute, vanilla, and sieved flour. Stir gently.

  • Add butter milk and chocolate chip. Stir gently.

  • Poured into greased loaf tin.
  • Bake it at 180° for 1 hour 15 minutes or till its done.


Notes:-

  • use over ripe banana for best flavor 
  • Butter milk substitute= 1/2 cup milk + 1 Teaspoon vinegar.
  • This freezes well.
