Milk-Gourd Halwa/Doodhi Halwa

Milk gourd or Bottle gourd are one of the favorite vegetables of Indians and  have numerous health benefits. Dharmesh (Hubby) and my daughters do not like to have Lauki in any form ,but they love to have "lauki ka halwa" 3 times in a day. Lauki is rich in minerals and vitamins, so I really want my kids and hubby to have this vegetable in any form and "Bottle gourd halwa" is the best option I have.

Ingredients
  • 1 kg Bottle gourd

  • 1 liter milk
  • 1 1/2 cup Sugar
  • 1/2 tsp Cardamom powder
  • 1 tbsp chopped Cashew or Almond flakes
  • A few Raisins
  • A pinch of Green food color (optional)

Vidhi (Direction)
  • Peel ,discard the seeds of bottle gourd and grate it.
  • Heat a pan with ghee add the grated bottle gourd and fry it until the raw smell goes.
  • Pour in the milk and stir well.
  • Let the Bottle gourd cook on medium heat till milk is nearly absorbed.Stir occasionally.
  • Add sugar.Cook for 10 to 12 minutes.
  • When halwa becomes thick turn off the stove and add Cardamom powder and chopped Cashew and Raisins.
